Ingredients
1/2 lb lean ground turkey
1 tsp olive oil
1 can diced tomatoes
1/2 onion diced
1 T tomatoe paste
1 1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp salt
1/4 tsp pepper
Crust:
4 oz fat free cream cheese
2 egg whites
1 1/2 T butter or margarine
1/2 can creamed corn
1/2 cup frozen or fresh corn kernels
1/4 cuped diced red bell pepper
1/4 tsp salt and pepper each
Preparation
Preheat oven to 375. Saute onion and ground turkey in 1 tsp olive oil until no longer pink and onions translucent. Mix in tomatoes, paste, and spices. Spread into a 8x8" baking pan sprayed with cooking spray. Place in preheated oven for 5 minutes. Meanwhile, whisk together cream cheese, butter and egg whites until fully incorporated. Stir in creamed corn, corn kernels, bell pepper and spices. Spread onto top of hot turkey mixture. Bake 45minutes or until brown.
