Ingredients

8oz fresh white button mushrooms

1 medium avocado

2 green onions (minced)

1 teaspoon garlic salt

1 teaspoon lemon juice (fresh is best)

3 oz Feta cheese crumbled

6 oz Basalmic vinagrette

Preparation

Clean mushrooms and remove stem and throw away. Place cleaned mushrooms in a bowl and pour the vinagrette over. Let them marinate for approximately 30 - 45 minutes. While they are soaking, remove avocado meat from shell and discard pit. Put avocado in a small bowl with the minced green onion (part of the green and white) add garlic salt and lemon juice. Mash all ingredients together then fill the mushroom caps with avocado mixture. Skewer each one through the sides push pick all the way to the end. Crumble feta over each one.
