Ingredients
4-5 chicken thighs and / drumsticks
Tandoori Marinade:
1tsp ground turmeric
2tsp garam masala
1tsp ground coriander
1tsp ground cumin
1clove garlic, chopped
3cm knob fresh ginger, peeled and chopped
juice of 1/2 lemon
100ml natural yoghurt
small handful chopped coriander stalks
sea salt and black pepper
Mango relish:
1 firm but ripe mango
1 large red onion, finely chopped
1 red chilli, deseeded and chopped
Juice of 1/2 lime
Preparation
Marinade: Mix all of the ingredients in a shallow bowl, add the chicken and turn the pieces over so they are all covered. Cover with cling film and refridgerate for a few hours or overnight.
Relish: Peel the mango and chop the flesh, discard stone. Mix with the chopped onion and chilli, and lime juice.
Cook the chicken over a medium heat BBQ, turning frequently until cooked. Use any remaining marinade to baste the chicken while cooking. Once cooked serve with the relish. Enjoy!
