Ingredients
1 c. cooked quinoa
1 T. oil
1 T. diced red onion
1 t. minced ginger
1 t. minced garlic
1 large zucchini, chopped
1 can chickpeas
1/2 t. turmeric
1/2 t. chili powder (or paprika)
1 t. ground cumin
1 t. ground coriander
1 t. cinnamon
1 t. cilantro
1/2 c. yogurt
Preparation
- Heat oil in saute pan. Add onion, ginger and garlic and saute until onion begins to turn translucent.
- Add zucchini, season with salt and pepper, and saute until cooked through.
- Stir in chickpeas and next five ingredients. Heat on low until chickpeas warmed through.
- Remove from heat, stir into cooked quinoa. Stir in cilantro and yogurt. Ready to serve!
