Ingredients
1 10oz can of each: Black beans, green peas, red kidney beans, corn.
2 tomatoes, 2 scallions, 2 tablespoons lemon juice, a pinch of salt, a quarter teaspoon of black pepper powder, 3 tablespoons chopped cilantro.
Preparation
Wash the black beans, kidney beans, corn, and peas out of the can. Put in a mixing bowl. Chop tomatoes (medium size cubes) and add to the mixing bowl. Fine chop the scallions and add that. Add the lemon juice, salt and black pepper and mix gently. Garnish with the fine chopped cilantro.
