Ingredients
1 can Shoe Peg corn (drained)
1 small can early small peas(drained)
1 small jar pimentos(drained)
1/2 cup diced green peppers
1/2 cup diced sweet red pepper
1/2 cup diced sweet yellow pepper
Dressing
1 cup sugar
1/2 cup vinegar
1/2 cup olive oil
Salt and pepper to taste
1 cup finely chopped celery
3/4 cup chopped onions
Preparation
Bring sugar, vinegar, oil, salt and pepper to boil. Remove from heat and set aside. Layer the vegetables in a large bowl. Pour the dressing over the vegetables and refrigerate overnight. Drain most of the jucie before serving.
