Ingredients

CRUST:

1 Cup Butter (soft)

1/2 Cup Powdered Sugar

2 Cup Flour

FILLING:

4 Eggs

2 Cups Sugar

1/3 Cups Flour

1/3 Cups Lemon Juice (fresh)

1 Teaspoon Baking Powder

1/4 Teaspoon Salt

1 Tablespoon Grated Lemon Peel

Preparation

Preheat oven to 350 degrees

CRUST: Beat the butter and powdered sugar until well blended. Add the flour and mix well. Press this onto the bottom of a well-greased 9 x 13 inch pan. Bake for 20 minutes

FILLING:

Meanwhile, beat eggs until light. Add sugar and continue to whisk while adding the rest of the ingredients. Pour this “custard” over the crust. Return to the oven and bake for 25 to 30 minutes until golden and custard is set. Cool on wire rack and cut into squares. Sprinkle with powdered sugar before serving.
