Ingredients

2 T. olive oil

1/4 c. seasoned rice vinegar

1 T. dry italian seasoning

cucumber 1 lg. or 2 med.

tomato 1 lg. or 2 med.

red onion 1 med.

1/8 t. salt or to taste

Preparation

In medium salad bowl combine olive oil, rice vinegar & italian seasoning.

Peel cucumber, leaving part of skin. Cut length ways then slice in 1/8" slices. Cut tomato in half, then slice. Slice onion then separate into rings. Put sliced vegtables on top of olive oil vinegar mixture. Sprinkle with salt. Toss to coat vegetables with olive oil, vinegar & seasoning mixture.

Refrigerate until served. Toss once more before serving.
