Ingredients

6 cloves garlic

1 cup fresh lime juice

1/2 cup orange marmalade

1/2 cup chopped fresh cilantro

8 Tbs olive oil

2 Tbs soy sauce

1 tsp red pepper flakes

1 tsp freshly ground black pepper

1-2 pounds fresh uncooked peeled shrimp

Preparation

Combine all ingredients except for shrimp. Reserve 1/2 cup for a dipping sauce. Pour the rest of the mixture over shrimp and marinate 4 hours. Drain and gently pat dry, spread shrimp onto a cookie sheet and bake @ 400° until shrimp are pink, about 6-10 minutes. Serve with dipping sauce. I had just cleaned out my refrigerator freezer and ran into a chunk of ginger and chopped it up and added it, it was a nice addition but not part of the recipe.
