Ingredients

2 cups red Lentils, rinsed

8 cups water

1 tomato chopped

1 onion chopped, divided

8 cloves garlic divided

2" fresh ginger chopped

1 tsp cumin

1 tsp tumeric

3/4 tsp salt

2 cups green beans

2 carrots diced

1/4 cup butter

1 tsp cumin seeds

1 tsp mustard seeds

Juice of 2 lemons

Preparation

In a large pot add lentils, rinsed and drain. Add water and bring to boil…spooning off foam as lentils start to cook. Add onion, garlic, ginger, tomato and simmer 5 minutes. Add the tumeric, cumin and salt and continue to simmer 5 mins. Add carrots and let simmer 15 mins.

Meanwhile, heat 1/4 cup butter in skillet, add onion, garlic, mustard and cumin seeds and cook at med/high heat until browned.

Add frozen green beans and let simmer another 5 mins. Add butter mixture from skillet. Add lemon juice.

Adjust salt to taste. Serve with brown rice.
