Ingredients

6 skinless, boneless chicken breasts

2 tbsp olive oil

3 tbsp lemon juice

1/2 tsp tarragon

1 tsp chopped chives

8 oz light sour cream

1/2 cup dry sherry

Preparation

Brown the chicken breasts in a fry pan over fairly high heat to sear the outside of the chicken

Turn down the heat and add the lemon juice

Spread the sour cream over the chicken

Sprinkle with tarragon and chives

add the sherry

Put a lid on the pan and simmer for 15 minutes

Turn the chicken in the sauce every 5 minutes

Serve the chicken over rice
