Ingredients

Smoked haddock 300gm

cucumber 50gm

new potatoes 50gm

chopped parsley

mayonnaise 60ml

salt

avovado fully ripe 2

vinaigrette dressing 50gm

Preparation

  1. Mix haddock, cucumber, potatoes, parsley,mayonnaiseand season lightly
  2. place into moulds, set into centre of plates,remove moulds.
  3. peel avocado cut into halves, remove stones, slice and sprinkle with lemon juice
  4. Arrange avocado in a fan around the base of the tartare
  5. Sprinkle the tomato around the plates.
  6. Garnish the tops with dressing and serve
