Ingredients

1 cup Bulghur

1 1/2 cup Water, boiling

1 1/2 ts Salt

1 cup Parsley, chopped (packed)

1 large onion, chopped

1 t Garlic, crushed (heaping)

1/4 cup Olive oil (little less)

1/4 cup Lemon juice (little less)

2 Tomatoes, chopped

Preparation

Cover bulghur with boiling water. Cover, let sit about 30 minutes till all the water is gone.

Add salt, parsley, green onions (and/or scallions), garlic, lemon juice and olive oil. Add 2-3 large tomatoes
