Ingredients
1 c whole grain cornmeal
Canola oil
Preparation
Pour boiling water or scalded milk on salted cornmeal, let set a little. Pour enough liquid to make meal soft. Put oil or bacon fryings on griddle to heat. Add two or three tbsp. of batter on griddle. Smooth over surface making the cake about 1/2 inch thick and round in shape. Brown and turn and brown other side. Serve hot with butter, Tdg Shallot Gravy, red or green chile.
