Ingredients
4-5 slices Bacon
6 Boneless, skinless chicken breast halves or 2 breasts and 4 thighs
1 med yellow onion, diced
1 tblsp minced garlic
1 10 oz Can condensed cream of chicken soup
4 oz sliced mushrooms
3 oz Sliced swiss cheese
Preparation
In large skillet, cook bacon until crisp. Remove bacon from skillet and drain on paper towels. Crumble bacon and set aside in refrigerator.
In the bacon drippings in the skillet, sautee onions, mushrooms and garlic. Add chicken and brown until light brown, turning once. Place in 4-6 quart slow cooker. Add soup and cook on low setting for 4 hours.
Top with cheese slices and sprinkle with bacon. Replace cover and cook on high for 10-15 minutes or until cheese is melted.
