Ingredients

1 1/2 lbs ground chuck

1/2 pound ground pork (or pork sausage)

1 red pepper, diced

1 onion, diced

3 green onions, sliced

3 T chopped garlic

1 chipotle pepper, canned in adobo sauce, chopped fine

1 T adobo sauce

1 T worcestershire sauce

3 eggs

1/2 cup tequila

1/2 cup bread crumbs

salt and pepper to taste

1 tsp ground chipotle powder

Preparation

  1. preheat oven to 325F. Mix all the ingredients in a large bowl (whiske the egg and tequila together to incorporate them, then add to the mixture).
  2. Place the meat mixture in a loaf pan and bake for about one hour
  3. Remove the meatloaf from the oven and let it rest for 10 to 15 min before slicing.
