Ingredients
2 cubed b/s chicken breasts
1 thinly sliced green pepper
1 thinly sliced onion
1/2 cup frozen kernel corn, thawed
1 1/2 cups favorite salsa
2 cups cooked penne pasta
2 cups tex-mex grated cheese
Preparation
cook pasta according to directions; stir-fry chicken and add pepper, onion and garlic during last 2-3 minutes; remove from heat; add corn and salsa and 1 cup of cheese; mix well and transfer to oven proof dish, cover with remaining cheese and bake 10 minutes or until cheese has melted
