Ingredients

2 lbs cooked sliced potatoes

1 cup sour cream (I use low fat)

1/2 cup mayo

1 Tbsp chopped bacon

2 Tbsp green onions

1 Tbsp chipolte adobo sauce

2 Tbsp shredded cheddar cheese 2tbs

salt and pepper to taste

Preparation

Cook the potatoes (sliced is nice) until tender, but not falling apart.

Prepare sauce with other ingredients. Add sauce to potatoes until desired consistency.

Garnish with additional cheddar, green onions, and bacon.
