Ingredients
1-2 cans shoepeg corn (drained)
1 can black beans (rinse and drain very well)
4 stalks celery-thinly diced
1 red pepper-diced
1 yellow or orange pepper-diced
1 jalapeno (seeded and finely diced)
red onion-finely diced
Equal parts 1/3-1/2 C each
Canola oil
White Vinegar
Sugar
Frito Scoops
Preparation
Mix the 1st 6 ingredients (corn-jalapeno) and put in colander to drain. Mix oil, vinegar and sugar together. Put vegetables in bowl. Pour oil mixture over. Serve with frito scoops.
