Ingredients

2 cans black eyed peas with jalapenos, drained

1 can white corn, drained

1 can black beans, drained

1 bunch cilantro, chopped

3 tomatoes, diced

1 red pepper, chopped

1/2 c. onion

1 or 2 cloves garlic, crushed

1/2 c olive oil

1/2 c. rice wine vinegar

Salt and Pepper to taste

Preparation

Mix in large bowl and refridgerate until serving time. Serve with corn chips or with corn bread.
