Ingredients
15 ounce can red kidney beans
15 ounce can garbanzo beans
12 ounce can white northern beans
15 ounce can black beans
1 onion, finely chopped
1 pound corn (frozen or fresh)
1 small bunch fresh cilantro, chopped
DRESSING
1/4 cup olive oil
3 tablespoons balsamic vinegar
1 teaspoon chili powder
1/2 teaspoon salt
1-2 tablespoons lime juice
Preparation
Drain and rinse beans well. Combine them into a mixing bowl. Add the onion, corn, and cilantro. Mix well.
In a separate bowl, combine the dressing ingredients and mix well. Add dressing to taste. The salad will absorb a lot of dressing, so you may not want to add it all at once. Mix well, cover, and chill overnight. Taste and add extra dressing if desired.
