Ingredients

2 cans black-eyed peas, rinsed & drained

1/2 cup vegetable oil

1/4 cup red wine vinegar

1 clove garlic, minced

1/4 cup mined onions, sweet or red

freshly ground black pepper

Preparation

Placed peas in a bowl or glass jar. Add remaining ingredients and mix. Cover/seal and refrigerate for at least one day before serving. Serve with tortilla chips. Optional ingredients: chopped jalapeno peppers, green onions, cilantro.
