Ingredients
1/3 c olive oil
3 medium onions, chopped
8 garlic cloves, minced
1/6 c + 1 t McCormick Chili poweder
1/2 t ancho chili poweder
1/2 t chipolte chili powder
1/2 t spice island chili powder
1 t coriander powder
3 jalepino peppers, finely diced
1 T cumin
4 lb boness beef chuck, cut in 1/2" pieces
1 bottle dark beer
1 14 oz can diced tomatoes
2 t dried oregano
2 t salt
1 T cornmeal
shredded cheese
sour cream
plum tomatos, diced
onions, diced
baked tortilla chips
Preparation
In large heavy pot, heat oil and saute onions and peppers until softened. Add chili powder and cumin and stir for 30 seconds. Add beef, beer, tomatoes, remaining spices and enough water to barely cover the beef. Simmer uncovered for 3 1/2-4 hours or until beef is tender. Stir in cornmeal and simmer for 5 minutes, stirring occasionally, until slightly thickened.
Serve with cheese, sour cream, tomatoes, onions and chips.
