Ingredients
5 ears of corn
cumin
toasted coriander powder
zucchini or similar squash
cracked pepper
salt
olive oil
sage rub powder
ground ginger
red dried chile del arbol
Preparation
1.shave kernels off corn and saute with cracked pepper, salt and olive oil for about 15 to 20 mins till light brown.
2.Add squash cubed and continue to saute for another 15 mins 3. add spices: coriander, sage, and ginger. 4.in separate pan place small amount of olive oil with cumin seeds and dried chilis until toasted. when toasted shred/ crush then add to corn dish and mix together. 5. serve with tortillas corn or flour.
