Ingredients

12 oz well trimmed skirt steak

Dressing:

1/4 cup fresh lime juice

2 T vegetable oil

2 t sugar

1 1/2 t minced jalapeno pepper

1/4 t salt

1/4 t minced garlic

Salad:

4 cups bean sprouts

1 1/2 cups thinly sliced cucumber

1/4 cup chopped fresh mint leaves

8 cups torn lettuce

Chopped peanuts for topping

Preparation

Grill or broil steak on oiled grill or broiler rack for 5-7 minutes, turning once for medium rare. Let stand 5 minutes, then slice thinly against the grain. Whisk dressing in large bowl until blended. Add steak and remaining ingredients except the lettuce. Toss to mix. Line serving platter with lettuce; mound beef salad on top. Sprinkle with peanuts.
