Ingredients
6 C. Vegetable Broth
13 Jalapeno Peppers
4 Garlic Cloves
2 Tbls. Grated Ginger
2 Tsp. Grated Lemon Zest
1/2 C. Lemon or Lime Juice
3 Tbls. Thai Fish Sauce
1/2 Lb. Mushrooms
1 1/2 C. Coconut Milk
2 C. Spinach
2 Tbls. Cilantro
16 Oz. Tofu
Preparation
Add veg. broth, peppers, garlic, ginger, lemon zest, lime juice, fish sauce, mushrooms, and coconut milk into a large pot and bring to a boil. Cover and simmer for 30 minutes. Then add the Cilantro, Spinach and Tofu.
