Ingredients
1/2 small red onion
1 small jalapeno, seeds removed
3 medium cukes
2 or 3 cloves garlic, crushed
2 tablespoons grated fresh ginger
1/2 cup rice vinegar
1/2 tsp salt
1/4 tsp pepper
2 tbsp sugar
Preparation
Dice onion and mince (finely chop) jalapeno and slice cukes as thinly as possible. Combine remaining ingredients and pour over vegies and mix well.
