Ingredients

Orange Roughy or Rock Ling

CURRY MARINADE:

1 shallot

2 cloves garlic

1 thumb-size piece galangal (or ginger), sliced

2t coriander seeds, ground in pestle & mortar

handful of basil leaves

2T fish sauce

1/2 can thick coconut milk or cream

2 kaffir lime leaves, snipped into small pieces with scissors

1 fresh red chilli, sliced

1t chilli powder

juice from 1/2 lime

Preparation

Marinade the fish for a couple of hours.

The original recipe called to wizz the marinade. I prefer not to - more rustica / authentic

Bake in oven at 180 for 30 - 45 minutes
