Ingredients

2 T Jasmine Rice or white

1 lb. ground meat

4 T lime juice

1/2 T Tahi Fish Sauce

1/2 c sliced shalltos

2 tsp. minced fresh ginger

4 scallions chopped

1/4 c mint leaves chopped

2 T chopped cilantro

2 T Tahi garlic chili sauce

2 tsp light brown sugar

Preparation

Toast rice in dry skillet, shaking until golden, about 8 minutes. Cool. Combine ground meat, 3 T lime juice, fish sauce, shallots and ginger in a bowl. Cook meat until cooked through and remove from heat. Add reminder of lime juice, scallions, mint, cilantro, garlic chili sauce, sugar. Add cooled rice to spice grinder and grind into a sandy powder and add to meat.
