Ingredients
one onion chopped small
one trimmed lemongrass stalk, bruised
one minced garlic clove
chopped beet greens from two beets
1 tsp pepper
1.5 cups lentils
one can coconut milk
one box veggie stock
salt to taste
Preparation
sauté one onion 10 min add chopped garlic clove add bruised lemongrass stalk add beet greens from two beets chopped small add 1 tsp of pepper add lentils, about a cup or two add one can coconut milk veggie stock to cover boil until thick add more veggie stock continue adding stock and boiling off until lentils are soft add salt to taste
