Ingredients

1-2 Ripe Mangos - sliced

Mesculin Greens

I shallot finely diced

Cilantro and Mint chopped

Blanched Snap peas julienned

Toasted Peanuts or sliced Almonds

Preparation

Blanch Snap Peas for 1 min. in boiling water and dip in ice water. Drain and dry and julienne. Put Greens on plate, top with mint and cilantro, top with slices of Mango, sprinkle shallot over. Drizzle dressing over top of salad and sprinkle on nuts and extra Cilantro for garnish if desired. Keep chiled. Excellent refreshing salad on a hot day.
