Ingredients

36 mussels in shell, steamed in salt water, then cooled

Marinade

1/2 red bell pepper, finely diced

6 green onions, finely sliced

1/2 bunch cilantro, finely chopped

1T. sambal (chile/garlic sauce)

1/8 c. soy sauce

1/2 t. sesame oil

juice of 1 lime

5 drops fish sauce

Preparation

Prepare marinade by combining all ingredients, except mussels

Remove mussels from shell, SAVING the shells in separate bowl in fridge Add mussels to marinade, leave in fridge at least 1 hour

Scoop marinated mussel mixture into half a mussel shell and serve on a platter, can balance shells on rock salt to avoid juice from spilling out of shells
