Ingredients
2lbs Shrimp
8oz Spaghetti (broken)
1 1/2lbs Broccoli
1/2C Peanut Butter (creamy)
1/4C Soy Sauce
3TBS Rice Vinegar
2TBS Toasted Sesame Oil
1TBS Chile Oil
1TBS Fresh Ginger (grated)
3 Cloves Garlic
4 Green Onions (chopped)
1/3C Cashews or Almonds (chopped)
Preparation
Rinse Shrimp and pat dry.
Cook spaghetti in boiling water in large pot for 4 minutes, add broccoli & cook 2 minutes, add shrimp cook for 2-3 minutes or until shrimp turns opaque & spaghetti is done.
Meanwhile, in a bowl stir together peanut butter and soy sauce. Stir in vinegar, sesame oil, chili oil, ginger & garlic.
Drain spaghetti mixture return to pot and add peanut utter mixture, green onions, & nuts. Toss gently to coat
