Ingredients
2.25L Water
600g chicken or pork bones
2-3 chopped up celery
2 quartered spanish onions
2 chopped coriander roots
6 kaffir lime leave (can be subbed for lime zest)
1.5 tablespoons chopped ginger
Salt and Pepper to taste
Preparation
Place all ingredients into a large pot. Bring to a boil on high and let it cook for several minutes.
Reduce heat so that it’s at a gentle simmer. Cook for 90mins.
As it cooks skim the fat from the surface. (Repeat if needed). When done, strain.
will be good for several days in frige. Perfectly fine to be frozen.
