Ingredients

1 10 oz. bottle Thai chili sauce ( I like Thai kitchen brand)

zest and juice from:

2 lemons

2 limes

2 oranges

2 tbsp fresh grated ginger

2 tbsp peanut oil

4 cloves minced garlic

1/3 cup sugar

1/4 cup white wine

2 tbsp mirin (Japanese sweet wine)

1 tsp fish sauce

1 tsp sesame oil

I’ve varied this on occasion with the addition of things like mint, coconut, coconut milk, cilantro, or basil

Preparation

Combine all ingredients in a blender, food processor, or hand blender until well combined. Return to a well sealed container Mason jars are good for this.

To make a slightly thicker sauce pour 1/3 cup of sauce into small saucepan, add 1 tsp cornstarch and bring to a light boil stirring constantly. This process with intensify the heat so you may want to add some sugar to taste to balance it.
