Ingredients
1/3 c. rice vinegar
3 T sugar
1/4 t. red pepper flakes
1/4 c. chopped cilantro
2 T. fish sauce
1/2 c. coconut milk
1 T ground fresh ginger
3 cloves garlic, minced
red snapper or other white fish
Preparation
combine first 3 ingredients in a small sauce pan and heat until sugar disolves
in a separate bowl combine next 5 ingredints
pat fish dry season with S&P place fish in a large piece foil pour all ingredients over fish fold foil around fish, crimp edges bake 14- 18 min in a 400 degree over.
