Ingredients

3 lbs. yams / sweet potatoes (I use yams)

2 beaten eggs

1/4 cup melted unsalted butter

1/4 cup softened unsalted butter

1/2 cup milk or half and half

1/4 cup all purpose flour

2/3 cup firmly packed light brown sugar

1 cup chopped pecans

garnish: fresh mint leaves or pesticide free lavendar flowers

Preparation

Preheat oven to 400 degrees F. Wash the potatoes, poke holes, cover in tin foil and cook for about 1 hour.

take potatoes out of the oven, and preheat to 350. peel, cut and rice the potatoes. DO NOT use a food processor. add eggs, melted butter and milk. beat until blended pour into a buttered 2qt baking dish. in another bowl, mix softened butter, flour, sugar and pecans with fingers. sprinkle over potatoes bake about 1 hour until topping is bubbly.
