Ingredients

1 16 oz can great northern beans

1 16 oz can black beans

1 16 oz can kidney beans

1 10 oz pkg frozen corn, thawed

1 2 oz jar pimento, drained

1 carrot, finely chopped

1/2 C olive oil

1/2 C cider vinegar

1 clove garlic, minced

1/2 t salt

1/2 t pepper

1/2 t chili powder

fresh chopped parsley

Preparation

Drain and rinse beans Combine veggies in lg bowl. Combine dressing and pour over veggies Refridgerate up to 4 days

Can also puree as a dip or spread.
