Ingredients
1 1/2 c. sugar
1/2 c. vegetable oil
3 eggs
1 1/2 c. flour
2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1 1/2# carrots, grated coarse
1 TB cinnamon
1 TB ground ginger
1/2 tsp. nutmeg
1/2 tsp. cloves
Preparation
Preheat oven to 325 degrees. Grease a 8 x 8 baking pan (glass or metal). Mix oil and sugar together until moist, like wet sand. Add eggs one at a time, mixing on medium speed. Sift together flour, baking soda, baking powder and salt, and add slowly. Add carrots and spices, and beat for one minute on medium high speed. Pour in to prepared pan and bake until top springs back, tester comes out clean and edges have pulled away from the sides, about 40-45 minutes. Cool in pan. Serve warm or room temperature.
