Ingredients
1 cup dark brown sugar, packed
1/2 cup white sugar
1 cup butter, softened
2 large eggs
2 tsp. vanilla extract
2 1/2 cups AP flour
1/2 tsp. baking soda
1/4 - 1/2 tsp. salt
3 Tbsp. white sugar
1 Tbsp. ground cinnamon
Preparation
Preheat oven to 300F. In a small bowl combine 3 Tbsp. of sugar and 1 Tbsp. of cinnamon. In a medium bowl, combine flour, baking soda, and salt. Mix well. In a large bowl, blend sugars with an electric mixer. Add butter and mix to form a grainy paste. Scrape sides of bowl and add vanilla and eggs, one at a time. Mix at medium speed until light and fluffy. Add the flour mixture and blend at low speed until just combined. Shape dough into 1 inch balls and roll in cinnamon sugar mixture. Place on ungreased cookie sheets 2 inches apart. Bake for 10-14 minutes and rotate halfway through, depending on how evenly your oven heats. Wait at least 5 minutes for the cookies to cool before moving them off the cookie sheet.
