Ingredients
1 cup all purpose flour
2 tablespoons cornmeal (I used corn grits)
2 tablespoons packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup milk (I used 2%)
1 cup whole ricotta cheese
1 egg
1 1/2 tablespoons melted unsalted butter
Preparation
In a large bowl, whisk the first six ingredients together (flour, cornmeal, brown sugar, baking powder, baking soda, salt). In a smaller bowl whisk milk, ricotta cheese and egg. Add liquid mixture to dry mixture. Whisk until lumpy. Fold in melted butter.
Add 1/3 cup to a warmed skillet. Flip when golden brown. Serve with maple syrup or fruit.
