Ingredients

ROASTED POTATOES

Time: 2 hours

3 1/2 pounds small red potatoes, peeled

Salt

1/2 cup dried rosemary

1/2 cup dried thyme

2 sticks butter

Ground black pepper.

Preparation

  1. Boil potatoes in lightly salted water for 20 minutes. Drain and dry with paper towels.
  2. Preheat oven to 350 degrees. Place potatoes, rosemary and thyme in baking pan. Roll potatoes in herbs. Bake until golden brown, about 1 1/2 hours.
  3. Melt butter and allow it to sit for 15 minutes, so white solids settle to bottom of pan.
  4. Transfer hot potatoes to a warm serving bowl. Pour in clarified (clear) butter. Mix well and season to taste.
