Ingredients

2 slices of hearty sourdough bread.

1 oz. - Pesto (Prepared)

6 - Red Onion Rings

1 - Small handful black olives

4 - Slices red tomato

1 oz. (approx) feta cheese

Preparation

Spread the pesto on the bottom slice of sourdough. Layer the onions, olives, and tomato on top of the pesto. Sprinkle the feta on top of the tomato. Top with 2nd slice of sourdough. Place on a heated panini grill, spray with Butter-Flavored Cooking Spray, and cook for 4 minutes or until golden brown. Cut in half, and serve with an organic spring greens salad topped with feta cheese, diced tomato, onion, black olives, and a Greek Roasted Garlic Viniagrette.
