Ingredients

BASE:

15 Oreo Cookies

50g butter

BROWNIE:

250g butter

250g dark chocolate

150g white chocolate or walnuts or both!

4 large eggs

400g sugar

2 tsp vanilla

150g plain flour

2 pinches of salt

FILLING:

400g St Moret Cheese OR 400g CreamCheese made thinner with 2 Tbs milk

3-4 Tbs runny honey

50 - 100g chopped pecans

Preparation

To make the base, put the Oreo Cookies and butter into a mixer, and pulverise to a fine crump. Press this into the bottom of a large (21-23cm) cake tin (well-buttered) and bake at 180c for 15 minutes. Remove from oven and let cool.

To make the brownie, melt butter in the microwave. Take it out - and add dark chocolate to it and let stand to melt. You can nuke it gently a bit more if it needs more help melting. But be careful the chocolate doesn’t get too hot, or it will split.

Mix eggs and sugar, salt and vanilla.

Mix the melted chocolate into the egg mixture.

Mix in the flour and white chocolate chunks /walnuts - but not too well. Like you would with muffins.

Then mix the filling. Mix the cheese with the honey (adding honey till it’s slightly sweet, but not too sweet) and then add the pecans.

Pour half the brownie mixture over the Oreo base. Then dollop the cheese mixture in on top of that. Then pour the rest of the brownie mix over that.

Bake in an oven at 180c for 30-35 minutes.

Remove from the oven, and allow to cool. Serve warm or fridge-cold.
