Ingredients
Dough:
1 envelope dry yeast
1/4 tsp sugar
3/4 cup warm water
1 3/4 cups unbleached flour
1/2 tsp salt
Toppings
1/3 Cup Italian blend cheese or Parm
1/3 cup fresh basil
1/4-1/3 cup onion (opt)
1 tsp olive oil
Sauce
Italian style diced tomatoes OR
Crush tomatoes w/ roasted garlic and onions
OR
Regular Pizza sauce - toast some anise seed and fennel seeds - grind and simmer w/ tomatoes for 20 min or so
Preparation
Combine yeast, sugar and water and let set for 10 min
Combine the flour and salt
Pour water/yeast mixture over flour
Knead for few min and shape into ball
Place in dish and find a warm place to let sit for 10 min
Place pizza pan in oven and heat to 500
Lay dough on floured surface and with floured rolling pin roll to desired thickness - something a bit thicker than hardcover book is just perfect for thin crust
Pull out pan from oven and lay crust on the pan.
Cover crust with sauce
Add toppings, drizzle with olive oil, cover with cheese
Place pizza pan back in oven for 10-12 minutes until cheese starts to bubble and turns slightly dark in color
