Ingredients

Dough:

1 envelope dry yeast

1/4 tsp sugar

3/4 cup warm water

1 3/4 cups unbleached flour

1/2 tsp salt

Toppings:

1/3 cup Italian blend cheese or Parmesan

1/3 cup fresh basil

1/4-1/3 cup onion (optional)

1 tsp olive oil

Sauce:

Italian style diced tomatoes or

Regular pizza sauce - toast anise seed and fennel seed - grind and simmer w/ tomatoes for 20 minutes (or so)

Preparation

Combine yeast, sugar, and water and let set for 10 minutes

Combine flour and salt

Pour water/yeast mixture over flour

Knead for several minutes and shape into a ball

Place in dish and find a warm place to let sit for 10 minutes

Place pizza pan in oven and heat to 500

Lay dough on floured surface. With floured rolling pin, roll to desired thickness (slightly thicker than a hardcover book cover is perfect)

Lay crust on heated pizza pan

Cover crust with sauce
