Ingredients

3 T cooking oil or shortening

1 cup corn meal

1 cup flour

1/4 cup sugar

1 t salt

3 t baking powder

1 egg

1 cup milk

Small hunk of unsalted butter, melted

If you use buttermilk instead of regular milk, you’ll probably have to add some add’l regular milk until it looks right.

Preparation

Preheat oven to 425. Add oil or shortening to 8" cast iron skillet and place in oven to preheat.

Mix dry ingredients together. Whisk wet ingredients together and add to dry. Don’t overmix.

Pour/spoon into skillet and bake 15-20 minutes until top is golden and some brown spots appear on top.
