Ingredients
1 can pinto beans
1 can black beans
1 can kidney beans
10oz box frozen corn
2 large carrots
14 oz can stewed tomatoes
4 oz chopped green chiles
3 cups water
2 TB beef boulion granules
1 medium onion
2 cloves garlic
Preparation
Saute onions, garlic, and carrots in olive oil until tender. Add all other ingredients except corn. Bring to a boil. Reduce to a simmer and simmer for 1-2 hours. About 15 minutes before done, add corn. Serve with a mexican cheese mix on top.
