Ingredients
1/2 Cantaloupe
1/2 Honeydew Melon
1/2 Watermelon
8 handfuls of Arugula
8 slices of prosciutto
10 mint leafs
3 tbsp pin nuts
6 tbsp red wine vinegar
4 tbsp olive oil
salt and pepper
Preparation
Make melon balls, put in bowl.
Cut the prosciutto in long slices, add to melons.
Cut the mint into little peices and add to the fruit preparation.
Mix the oil and vinegar, salt and pepper and mix with melon preparation
Roast the pine nuts in a pan and mix with the arugula.
Put a layer of salad on a plate, and add the melon mixture on top, and serve.
