Ingredients

1 cup quick-cooking oats

1 cup sugar

1/4 lb butter, melted

3 tbsp flour

1/4 tsp salt

1 tsp vanilla

1 egg

1/4 tsp baking powder

Preparation

Mix all ingredients together well. Drop by 1/2 teaspoon (be exact… if you drop too much, they’ll be crispy on the outer edges and not get done in the middle!) onto foil-lined sheet, 2 inches apart. Bake at 350 for 6-8 minutes (more like 9 in my oven). Allow to cool thoroughly on foil. When cool, peel off of foil. Easy. Can do ahead. Would be great as a garnish for ice cream or pie…
